When Lauren was thirteen, she visited the Chick-fil-A Support Center with her Dad for the first time and had the opportunity to meet Chick-fil-A Founder, S. Truett Cathy. It was at that time she was truly inspired by his business values and work ethic. Lauren grew up in the restaurant industry, watching her Dad lead his Chick-fil-A restaurant from a young age. Seeing first-hand the dedication it takes to develop a business and how impactful it is to show care for your guests and your team.
Lauren started as a team member at Chick-fil-A Oakwood Shopping Center at fourteen years old and later relocated with her family to the Chick-fil-A Covington-Highway 190 location in June of 2005. As a high school student working at Chick-fil-A she gained invaluable work experience and developed leadership skills at a young age. She was awarded a Chick-fil-A Scholarship for college and began her education at Southeastern Louisiana University in 2008.
Loving the sisterhood she experienced at St. Scholastica Academy high school, she knew she wanted a similar experience in college. She joined Phi Mu Fraternity and served as Treasurer and President during her time in the sorority. After college, she began working on the leadership team at Chick-fil-A Covington-Highway 190 where she began to have dreams of becoming a Chick-fil-A Operator. Lauren was accepted into Chick-fil-A Inc.’s Leadership Development Program where she served as a Grand Opening Supervisor and Interim Manager for two years. Traveling all around the U.S. she found passion in leading teams to believe and achieve in their success.
In 2016, she became the Owner/Operator of the Chick-fil-A Lakeside Shopping Center. During this time, her team was recognized with the highest sales honor from Chick-fil-A, the Symbol of Success. Which then lead her to even more opportunities for growth with a free-standing location. In June 2021 she became the Owner/Operator of the Chick-fil-A Covington Hwy 21.
Lauren met her husband, Trey, while working at Chick-fil-A as teenagers and bonded over a passion for teamwork and serving others. Lauren and Trey run their family-owned business together. Their teamwork extends beyond the business, they have two sons and look forward to the day the whole family will work in the business together.

Desiree Acosta has been serving since 2017 with Chick-fil-A . She began her Chick-fil-A career as the catering coordinator. Through her dedication, passion to lead and servant leadership she quickly was promoted in each job role she held. Desiree graduated from Southeastern University with a Bachelor Degree in Sports Management & a minor in Dance. Desiree is an alumni of Alpha Sigma Tau Sorority.
She loves spending time with her husband Hunter and her dogs Zazu & Nala. Personal hobbies include outdoor activities, puzzles and dance. Desiree taught dancing for 9 years as well as coaching for an award-winning dance team. She is passionate about her personal and organizational development. Desiree is always seeking out knowledge to grow herself and her team. She is continuously listening to podcasts and taking notes in her leadership books. Her favorites being: the “Entree Leadership” and “At the Table with Patrick Lencioni” podcasts and her bedside favorite book is Atomic Habits by James Clear.
Desiree looks forward to learning more each day at Chick-fil-A Hwy 21 and use these skills become a future owner/operator.
Emily Cobos has been serving since 2019. She started at Chick-fil-A as a Human Resource Coordinator at Lakeside Shopping Center, working as a leader on the front counter. In January of 2020 Emily was promoted to the Talent Director where she stepped out of operations and focused on training and team member development as well as onboarding, hiring and recruiting.
Emily graduated from American Intercontinental with a Bachelor’s degree in Business Administration with a specialization in Human resources. Emily, participated in the Disney College Program in Spring of 2019 where she began her career in the restaurant industry learning the ins and outs of Quick Service food and beverage in the amazing Disney Hollywood studios. Outside of work, Emily enjoys traveling and exploring new places, with her favorite and most memorable vacations being at Disney World in Florida.
Emily has a strong sense of morals and ethics, she will always be the person who stands up for what is right, which is something she continues to inspire into our team. Her favorite part of her role is planning and organizing team member events and showering them with appreciation. Emily seeks out and hires our one of kind chosen talent, while also helping engage and develop our team. Emily enjoys getting to know new team members through the interview process and is fulfilled when she is working towards growing and building a successful team for Chick-fil-A Covington Hwy 21.
Mina began her journey with Chick-fil-A Covington Hwy 21 in October 2021. Mina graduated with a B.S. in Hotel, Restaurant & Tourism with a minor in Marketing. Mina has 15+ years’ experience in the hospitality industry with specializations in marketing, brand impact, restaurant and hotel operations, sales and revenue management and social media management. As our Sales and Brand Growth Director one of Mina’s focuses is building relationships and community partnerships that align with Chick-fil-A Covington Hwy 21 vision and values.
Mina is excited for the opportunity to work with a brand she loves while ensuring ReMarkable experiences for our guests. Mina loves her family and loves the Covington community. On Sundays’ she looks forward to fishing with her husband and children. Enthusiasm, creativity and fun are words that describe her.
